Easy Balsamic Vinaigrette Artichokes

Balsamic Vinaigrette Artichokes only takes 15-20 minutes to prepare start to finish. So easy to make, very tender, and oh so delicious! No garlic butter or dipping sauce needed. Makes 2-3 Servings
Ingredients
3 Small or 2 Large Artichoke Globes
1/2 cup water
3 teaspoons butter or margarine
1 fresh lemon
1/8 to 1/4 cup Balsamic Vinaigrette Salad Dressing (any variety)
Trim off artichoke stem and slice off the top about 1 inch down. Peel back base leaves about 1-2 layers and pull them off the globe. These will be too tough to eat. Discard trimmings.
Pour 1/2 cup water into a large microwave safe bowl, then place globes in the bowl. Gently loosen the artichoke leaves out to allow room between the leaves. I call this “flowering” the globe. Squeeze about 1/4 fresh lemon over each globe.
Pour 1/8 to 1/4 cup Balsamic vinaigrette salad dressing over each globe. Top each globe with 1 teaspoon butter or margarine.
Cover globes and bowl tightly with plastic wrap. Place in microwave oven and steam on high setting for 12-15 minutes. If preparing a single large globe, cook on high for 10 minutes and use about 1/4 cup water. However, it is best to have too much water instead of too little water in the bowl.
Allow to cool for 5 minutes and serve. Goes well with garlic bread and spaghetti.

It works great! I tried it out myself. My mother has never eaten an artichoke, but loves Balsamic Vinaigrette. So, I plan on cooking dinner for her on Friday and preparing the artichokes this way.
