Stuffing Stuffed Artichokes

Sweetheart Artichoke Company

Stuffing Stuffed Artichokes take about 30 minutes to prepare. It is an impressive appetizer that is easy to make. Serves 2.

Ingredients
2 Artichoke Globes
1 6oz package Stove Top Stuffing
1 TBL Butter or Margarine
3 Garlic Cloves Chopped
1 Fresh Lemon
Garlic seasoning or garlic powder to taste.


Prepare stuffing according to box instructions. Variation may include gluten free corn bread stuffing. The stuffing can also be mixed with cheese, chopped celery, snow peas, chicken, or turkey. Chop and add 3 garlic cloves to the stuffing mix. Instead of water, white wine, chicken or turkey broth may be added to the stuffing for extra flavor.

Wash artichoke globe. Trim off stem and discard. Peel back and pull off the first 2 bottom layers of artichokes leaves. These will be too tough to eat.


Cut off the top of the artichoke globe with a sharp knife and trim off any jagged edges with a clean pair of scissors.


Squeeze 1/2 lemon over entire artichoke. This will help prevent browning (similar to apples) and will neutralize the bitter artichoke taste.


The artichoke leaves will be tightly packed. Gently loosen and pull apart the leaves to allow room for butter and seasoning. Scoop and pull out the ball of white center leaves with a spoon. Leave the artichoke heart intact at the bottom. Lightly sprinkle garlic seasoning or garlic powder over the artichoke and inside the globe. Add 1 pat of butter or margarine (about 1 teaspoon) inside the globe.

Place artichoke in a small microwave safe bowl and fill with stuffing. Make sure there is enough moisture in the stuffing mix so it will not dry out while cooking. Scatter bits of the remaining butter over the stuffing. Cover and wrap the bowl and globe tightly with plastic wrap.

Prepare and fill second artichoke. Microwave each artichoke on high for 10 minutes. Cooking time will vary if both artichokes are cooked at the same time. Allow to stand for 5 minutes before unwrapping. Be careful of hot escaping steam. Serve and enjoy!
