Roasting Artichoke Globes takes the bitter tast away.
Artichoke Globes have a distinctive bitter taste. When it comes to taste, bigger is not always better. Larger artichoke globes tend to be tougher and have a stronger bitter taste. During the first year of production, artichoke globes will be very bitter compared to the following seasons. If you are looking for a sweeter tasting artichoke with less bitterness, the Italian Purple Violetto is a wise choice. It will produce dark purple globes during the first year and then a burgundy-green color the following seasons.

BBQ Grill Roasted Artichoke Globes
This recipe will take the bitter kick out of your artichoke globes.
Ingredients
2 large artichokes
1 lemon or 1/2 cup lemon juice
3/4 cup melted butter or olive oil
4 cloves garlic, chopped
1 teaspoon salt
Directions
1. After rinsing the globes, mix the lemon, butter, garlic, and salt in a bowl.
2. Cradle each artichoke globe in foil and pour the mixed ingredients between the leaves.
3. Wrap the artichoke globes tight to preven any leaking.
4. Roast on a medium-high heat on the grill for about 1 hour or until the leaves easily pull from the globe.
5. Serve as is or with your favorite artichoke dip and enjoy!
